Description

An enzyme that decomposes cellulose. Cellulase is naturally produced by bacteria and fungi (such as, Aspergillus niger and Trichoderma viride). It is used in the brewery industry to breakdown cellulosic grains into glucose which is then fermented for ethanol. Cellulase is also used by the papermaking industry to produce pulp.
