Description
Proteins obtained from seeds of legumes or plants. Vegetable proteins are globulins, such as prolamine or glutelin. Some can be soluble in water, ethanol or salt solutions. Aqueous extracts of vegetable proteins have been used as pastes and adhesives. Examples of plant proteins are:
