Description

A Protease type enzyme that hydrolyzes proteins. Rennin is a digestive enzyme that is secreted by the glands of the stomach. It curdles milk and is used to make Casein and cheese. Pure rennin is a yellowish-white powder that is soluble in ethanol. Rennet, the dried extract of the stomach lining, is the major source of rennin.
